3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 sm pkg dry vanilla pudding (not instant)
3 Tbsp. butter
1 egg
1/2 c. milk
1 (15 oz) can sliced peaches, drained; reserve juice

Topping #1:
8 oz cream cheese, softened
1/2 c. sugar
3 Tbsp. reserved juice

Topping #2:
1 Tbsp. sugar
1/2 tsp. cinnamon

Directions:
Directions:
Grease bottom and sides of 9" deep dish or 10" regular pie pan. Combine batter ingredients in lg bowl except for peaches. Beat 2 minutes at medium speed and pour into prepared pan. Place sliced peaches over batter after you drain them- reserving juice. Combine in small bowl topping #1. Beat 2 minutes at medium speed. Spoon over batter to within 1" of edge of batter. Combine in small bowl topping #2. Sprinkle over topping #1. Bake @ 350º for 30-35 minutes until crust is brown. Filling will appear to be soft.

Yields: 8 servings
