1 deep dish pie crust
4 oz. cheese (Swiss, Gruyere, or cheddar)
3 eggs, beaten
4 oz. heavy cream
1 c. milk
1/2 tsp. salt
1/4 tsp. white pepper
pinch nutmeg
8 oz. bacon, diced
2 oz. onion, diced

Directions:
Directions:
Cook bacon in a hot skillet until crisp. Remove bacon and keep 1 T of bacon grease. Saute onions in grease. Place bacon and onion in frozen pie shell. Sprinkle cheese over the top. Beat eggs, cream, milk and seasonings well and pour into shell. Bake at 375º 20-30 minutes or until filling is set.

Yield: 8 servings
