3 lbs. potatoes ( about 12 medium),

1 (8 oz.) pkg. cream cheese softened,

1/4 c. butter, softened,

1/2 c. milk,

2 eggs, slightly beaten,

1/2 c. sour cream

1 tsp.salt

Dash white pepper

1/4 c. onion, finely chopped, optional

Peel and cook potatoes and drain. In large bowl with mixer mash the hot potatoes. When all lumps are removed, add cream cheese in small pieces and then the butter. Beat well until cheese and butter are both melted and completely mixed. Add sour cream. Blend eggs, onions and milk. Add this to the potato mixture along with salt and pepper. Beat well until light and fluffy. Place in a greased 10 inch casserole and refrigerate several hours or overnight. Bake at 350º for 45 minutes or until lightly browned on top.
