6 Slices of Bacon (cut in 1-inch pieces)
1 Onion Diced
1 Clove of Garlic (chopped)
1/4 tsp. Dried Thyme
3 Baking Potatoes (peeled and cut into 1/2-inch pieces)
3-1/2 Cups of Chicken Broth
1 Cup of Sour Cream
1/2 Cup Sharp Cheddar Cheese
Salt and Pepper to Taste
2 Tbsp. Minced Chives

Directions:
Directions:
In large pot, cook bacon over medium heat until crisp. Transfer to plate and cool and crumble. Keep 2 Tbsp. of bacon fat and discard the rest.

Add onions, garlic and thyme and saute until onion is soft - about 7 minutes. Add potatoes and broth. Bring to a boil. Reduce heat to low and simmer until potatoes are tender (15-20 minutes).

Add sour cream and sharp cheddar cheese and cook for 5 more minutes. Top with chives and crumbled bacon pieces.

Note: For a creamy soup - process in blender and then add toppings.
