2 Tbsp. olive oil
1 lb. sweet Italian sausage, casings removed and crumbled
1/2 tsp. dried red pepper flakes
1/2 cup diced onion
3 garlic cloves, minced
1 (28oz) can Italian plum tomatoes, drained, and chopped
1 1/2 cups whipping cream
1/2 tsp. salt
12 oz. bow tie pasta
3 Tbsp. fresh parsley, minced
Parmesan cheeses, freshly grated

Heat oil in heavy large skillet over medium heat. Add sausage and pepper flakes. Cook until sausage is no longer pink, stirring often, about 7 minutes.

Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring occasionally, about 7 minutes. Add tomatoes, cream, and salt. Simmer until mixture thickens slightly, about 4 minutes.

Cook pasta in large pot of salted boiling water until just tender but still firm to bite, stirring occasionally to prevent sticking. Drain.

Bring sauce to simmer. Add pasta and cook until pasta is heated through and sauce thickens, stirring occasionally, about 2 minutes. Divide pasta among plates. Sprinkle with parsley. Serve with Parmesan cheese. Sauce can be prepared 1 day ahead. Cover and refrigerate.
