1 lb med size beets
3 Tbsp. extra virgin olive oil
2 tsp lemon juice
2 med cloves garlic
pepper and celtic salt to taste

Directions:
Directions:
Fill bottom of steamer with 2" of water. While water is coming to a boil, chop or press garlic and let sit for 5 minutes. Peel beets under running water and cut into quarters. Steam, covered, for 15 minutes. Transfer to a bowl. Mix oil, lemon juice, garlic, and salt and pepper and add to beets.

Broccoli, brussel sprouts, green beans, or cauliflower may also be used.
