2 lbs fresh summer squash
3/4 c. light mayonnaise
3/4 c. bell pepper, chopped
3/4 c. onion, chopped
2 eggs
salt and pepper to taste
1 1/2 sticks butter, butter
2 c. sharp cheddar cheese, grated
25-30 Ritz crackers, crushed

Directions:
Directions:
Wash squash, slice and bring to a boil in salted water. Cover and cook 15-20 minutes. Drain and mash squash with a spoon; add 3/4 c. butter, salt and pepper, eggs, mayonnaise, onion, and bell pepper. Blend together. Pour into casserole dish. Cover dish with grated cheese and crushed Ritz crackers. Pour remaining melted butter over crackers. Bake @ 350º for 30 minutes. Cool before refrigerating.
