1 lb. or so large stuffing mushrooms
1 stick butter or margarine
1 large onion, minced
Italian croutons (1/2 - 3/4 cups, crushed)
Shaved Parmesan cheese (about 1/2 cup)

Directions:
Directions:
Clean mushrooms, keeping and chopping the stems. Melt butter/margarine in a large skillet.
Sauté onion and chopped mushroom stems in the butter/margarine until the onion is translucent.

Crush the croutons. Remove onion/mushroom mixture from heat and cool slightly. Add the crushed croutons and Parmesan to the sautéed onion, mushroom mixture and mix.

Stuff mushrooms with the mixture (can be made the night before they are to be served).

Bake in 350 degree oven for 20 - 30 minutes, until top starts to brown.
