Ingredients:  
3 cups all purpose flour
1 tsp of baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup shortening
1/2 stick of butter (1/4 cup)
1/2 cup sugar
2 eggs
1 tsp of rum extract
1 cup of crushed pineapple (drained but save juice)
1 cup of coconut

Directions:
Directions:
Mix all wet ingredients first - egg, rum, pineapple, coconut, shortening, butter then add flour, baking soda, sugar, salt and baking powder
Make small dough ball
Grease pan
Bake 10-12 minutes at 350 degrees

While baking make glaze:
2 cups of powdered sugar
1/2 tsp of rum extract
2-3 tbls of pineapple juice (get to consistency of glaze)

Ice while warm
