1 cup shortening
1-3oz package cream cheese, softened
1 cup sugar
1 egg
1 tsp. almond extract
2 1/2 cups flour
1/4 tsp. baking soda
1/2 tsp. salt
1 1/4 cups finely chopped pecan
36 maraschino cherries-halved

Directions:
Directions:
Cream shortening and cream cheese, gradually add sugar, beat until light and fluffy. Add eggs and extract, beat well.
Combine flour, soda and salt; add to creamed mixture, beat well. Chill 1 hour.
Shape dough into 1 inch balls, roll in pecans. Place on baking sheet. Place cherry in center of each cookie. Bake at 350º for 12-15 minutes.
Store in an airtight container in the fridge up to 1 week.
