fish or chicken
2-3 shallots, finely chopped
4 T.+ butter
1/8 c.+ flour
1/8 c. white wine
juice of one lemon
1/8 c. melted butter
white pepper and salt

Directions:
Directions:
To chicken or fish drippings in skillet, add butter and saute shallots. Make roux by adding flour. Stir in wine and lemon juice; add melted butter and season with salt and white pepper to taste.
