½ lb feta cheese (crumbled)
½ lb. small curd cottage cheese (drained a bit)
½ c. parmesan cheese
4 eggs
Salt and pepper to taste
1 box filo dough (pastry sheets)
½ to 1 lb butter, melted

Directions:
Directions:
Beat eggs, fold in cheeses, and add salt and pepper to taste. Open one filo sheet and brush with butter, place second sheet on top, brush with butter, and add third sheet and brush with butter.

Cut lengthwise into thirds. Place a teaspoon of filling on the end of one strip. Fold the lower corner over the filling to make a triangle, then fold the upper corner to make a triangle and continue folding side to side until entire strip is a used and small triangle formed.

Brush melted butter on seam to hold together. Place on cookie sheet and bake at 350 degrees for about 15 minutes or until golden brown.

The dough will dry out quickly so cover sheets with damp cloth to retain moisture
