1 box vanilla wafers (minis work well)
3 ripe bananas
2 lg boxes cook & serve vanilla pudding
6 c milk
2 t vanilla
3 eggs, separated
3 T sugar

Directions:
Directions:
Prepare the pudding according to package directions, tempering and adding 3 beaten egg yolks and 1 teaspoon of the vanilla in with the milk, stir constantly over medium heat until it comes to a boil. Allow cooked pudding to cool to room temperature. Layer the bottom and sides of a 9 X 13 casserole with the wafers. Pour half of the pudding over the wafers. Slice the peeled bananas over the top, then cover the bananas with the remainder of the pudding. Top with meringue and bake at 375º until meringue is lightly browned, about 15 minutes.

Meringue:
Beat egg whites to a stiff peak, slowly adding a tablespoon of sugar per egg white. Once the eggs have reached stiff peaks, add a teaspoon of vanilla & mix. Use immediately.
