1 Tbsp cornstarch
1/3 c. granulated sugar
orange juice

Directions:
Peel and cut up sweet potatoes. Cook and then drain the potatoes. Place them in a baking dish and dot with butter. Mix cornstarch and granulated sugar in a 2 cup measuring cup. Add enough orange juice to reach the 2 c. mark. Stir well and pour over potatoes. Bake @ 350º-400º for about 20 minutes.

Note: 29 oz canned yams (drained) may be used and just reduce the orange juice by 1 c..
