Chicken breasts
salt and pepper
Oil
1/3 cup fine dry bread crumbs
1/3 cup moist coconut
1/4 cup melted butter

Directions:
Directions:
Sprinkle chicken with salt and pepper. Brush with oil. Combine bread crumbs and coconut. Roll chicken in mixture to coat. Place in greased shallow baking pan; drizzle melted butter over top. Bake at 350 for 40 minutes or until tender.
