1 Package Chicken breast, boneless, skinless
1 lbs. Penne
Homemade Pesto, or store bought pesto
1 Jar Roasted Red Peppers
4 Tomatoes
1 - 2 Onions (small)
1 Package Mozzarella Cheese
Extra Virgin Olive Oil
1 - 3 Garlic cloves (or what you like)

Directions:
Directions:
Cut tomatoes, onions, jar of red peppers, and garlic put in to a bowl; add 1 tsp salt (it draws the water out of the tomatoes and makes it salsa like). Let sit while doing the chicken.
Cook Penne.
Pour 1-2 tbs of olive oil in frying pan, season chicken with salt pepper, and garlic powder; add chicken to frying pan cook both side all the way through. Take chicken out; let sit on cutting board. Use the same pan from the chicken and add tomato mixture to the pan and cook until boiling. Drain Penne, and put in large mixing bowl. Cut chicken, add to pasta, and add the tomato mixture to penne. Add Pesto and Mozzarella cheese; stir together and enjoy!
