1 1/2 c flour
3/4c white sugar
1/2 t salt
2 t baking powder
1/3 c coconut oil
1 egg
1/3 c milk
1 c fresh blueberries (or more)

Struessel Topping
1/2c white sugar
1/3c flour
1/4c butter, cubed
1 1/2t cinnamon

Directions:

Preheat oven to 400º. Grease muffin cups or line with liners.

Combine 1 1/2 c flour, 3/4c sugar, salt and baking powder. Place coconut oil in a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with the flour mixture. Fold in blueberries. Fill muffin cups right to the top and sprinkle with crumb topping mixture.

To make crumb topping: mix together 1/2 c sugar, 1/3 c flour, 1/4 c butter, 1 1/2t cinnamon. Mix with fork and sprinkle over muffins before baking.

Bake 20 to 25 minutes until done.
