3 green and red peppers
3/4 c. minced garlic
2 large onions -- chopped
12 lb. ground beef
4 lb. sausage
1/2 lb. pepperoni -- sliced thin or chopped
1 bunch fresh basil - chop or cut with
scissors
oregano -- same as basil
4 T. salt
1/2-3/4 c. sugar
3/4-1 c. dry Italian seasonings
2 64 oz. cans tomatoes -- crushed
2 64 oz. cans tomato sauce
1 64 oz. can tomato paste
1-2 64 oz. water - use empty cans from above
hot sauce -- individual preference -- put in last after
taste testing.

1. Saute garlic and onions a few minutes until
transparent.
2. Add meat and sausage and brown. Drain
most of fat off.
3. Add remaining ingredients and bring to boil.
Reduce heat, cover loosely and simmer at
least 6 hours.

YOU WILL NEED A 20 QT. STOCK POT FOR THE SAUCE.
Can be served immediately, reheated in a stock pot or a roasting pan, or frozen in containers with tight lids. Label and use within 6 months.
