1-2 lb piece of flank steak
1/4 olive oil
2 T butter
2 T salt
1 T black pepper
1 T garlic powder

Directions:
Directions:
Trim any fat from the steak, and sprinkle it with the dry spices. In a large heavy skillet, preferably cast iron, heat the oil and butter over medium high heat until sizzling hot, but do not burn the butter. Sear in the hot oil for about 4 minutes on each side, almost to desired doneness. Transfer the steak to a plate, cover lightly with foil, and allow to rest for at least 15 minutes. Slice thinly, against the grain of the meat.

Don't put the meat on a cutting board to rest, as you'll need something that is not flat to collect the juices that will run from the meat while cooling.
