1 c oil
2 eggs
1 1/2 c sugar
1 c buttermilk
2 1/4 c self rising flour
2 T cocoa
1 t vanilla
1 t vinegar
1 t baking soda
2 oz food coloring

ICING:
2 8 oz packages of softened cream cheese
1 box powdered sugar
1 t vanilla

Directions:
Directions:
Mix soda and vinegar together and set aside. Cream oil and sugar. Add eggs, then coloring. Add flour alternately with buttermilk. Add vanilla. Add vinegar and soda mixture. Pour into 3 greased and floured cake pans. Bake at 350º for 20 minutes. Beat together icing ingredients until smooth and frothy. Ice the cooled cake.
