2 medium eggs
1/4 tsp. green peppers
1/4 tsp. red peppers
1/4 tsp. onions
1 T. olive oil
2 slices American cheese or (2 T.grated swiss, etc.)
dash salt
dash pepper
*Note* - diced ham, cooked bacon or cooked chicken, can be added to cheese omelet.

Prepare a 10" saucepan with olive oil. Beat eggs together in a bowl, add peppers, onions, salt, Mix well. Pour into hot oil. Cook on low heat, allow peppers to cook well. Once the omelet is cooked on one side, turn it over onto the other side, (use a wide enough spatula) place the cheese on the already cooked side, allow the other side to cook. Roll the omelet into a roll length wide. Sprinkle a little grated cheese, or place a couple strips American cheese on top of roll, place on plate. Put picante sauce along the length of the omelet.

Eat and me merry. This can be served with grits and a slice of buttered toast or jelly toast. Delicious. My favorite breakfast.
