3 to 4 pork tenderloins (approx. 1 to 1-1/2 lbs. each)
4 T. balsamic vinegar
4 T. olive oil
8 cloves garlic, cracked & sliced thin (1/8" thick)
1/2 tsp. steak seasoning or Cavenders Greek seasoning
1/4 tsp. ground pepper
1-1/2 tsp. fresh rosemary, finely chopped
1-1/2 tsp. fresh thyme, finely chopped

Preheat oven to 500º.

Trim the connective tissue (silver skin) off the tenderloins with a sharp knife.

Place tenderloins on a nonstick baking pan with a rim. Rub a few tablespoons of balsamic vinegar into the meat. Drizzle tenderloins with just enough olive oil to cover. Cut small slits into meat and place slices of cracked garlic in them.

Combine steak seasoning or Cavenders Greek seasoning, pepper, rosemary and thyme and rub meat with mixture. Bake in hot oven 20 minutes (after 10 minutes baste with juices in pan then finish baking for another 10 minutes).

Let meat rest for 5 minutes, transfer to a carving board, slice and serve.
