Seasoning:
3 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube
1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin
(I mix all of this into a small tupperware bowl and keep with my spices

1-2 lbs. meat of choice
1 onion sliced
2 bell peppers (different colors)

1. Slice meat into 1/2 inch thick strips
2. Slice onions
3. Cut bell peppers into strips
4. Cook chicken on med-high in large non stick pan with 1 tbsp. veg. oil until white and cooked through...do not brown.
5. Remove chicken and add veggies...cook until they are the texture you prefer. I like mine somewhere between crispy and limp =)
6. Add chicken back to pan, sprinkle with a good helping of fajita seasoning, add 1/4 c. water, simmer for 3 minutes and serve.

I serve this with flour tortillas, refried beans, Mexican rice and guacamole.
