3 to 4 boneless, skinless chicken breasts
1 package of fajita seasoning mix
1 cup ranch dressing
1 cup pesto
3 cloves garlic, minced
1 purple onion
1 red pepper
1 green pepper
4 cups of shredded mozzarella cheese
1/2 cup Parmesan cheese
olive oil

Pizza Dough:
2 packages of fresh pizza dough from Trader Joe's OR 2 boxes of hot roll mix OR use one from an online recipe source which includes olive oil.

Directions:
Directions:
Slice the chicken breast into thin strips and place in a bowl. Add the fajita mix into the chicken and mix well, place in refrigerator to marinate for 20 to 30 minutes, while you cut up the veggies and prepare the dough. Slice the red onion and peppers into thin rings and set aside. Mix the pesto, garlic and ranch dressing together in another bowl and set aside.
In a large hot saute pan, heat olive oil and saute chicken lightly until golden brown (you don't have to cook the chicken completely, as it will complete cooking on top of pizza).
Preheat oven to 475-500 degrees.
Assembly: Prepare dough as directed and allow it to rise on pizza pan or baking sheet. Spread pesto/dressing mix onto dough, add chicken onto sauce then cheeses and finish with onions and peppers. Bake pizza for 20 minutes or until bubbling and crust is deep brown, rotating it 180º 1/2 way through baking time. Garnish with more Parmesan cheese, if desired.

I developed this recipe over the years after a visit to Tenakee Springs, Alaska. While there, good friends asked me to make pizza and I used whatever they had in the pantry to make what has become a really good pizza. Obviously, you may add olives, mushrooms, etc if you wish.
