1 1/2 c. Crisco oil
1 1/2 c. sugar
2 eggs
2 1/2 c. cake flour
1 c. buttermilk
1 tsp. baking soda
1 tsp. cocoa
1 tsp. vanilla
1 tsp. white vinegar
1 oz bottle red food coloring

Cream cheese icing:
1 lb confectionery sugar
8 oz cream cheese
1 stick margarine
1 tsp. vanilla
1 c. chopped pecans

Directions:
Directions:
Cake: Mix oil and sugar, add eggs to mixture. Sift flour separately, add soda and cocoa. Alternately add flour mixture and buttermilk to oil and sugar mixture (start and end with flour). Add vanilla, vinegar and food coloring. Bake in three layers @ 350 for 20-25 minutes

Cream cheese icing: Soften cream cheese and margarine to room temperature and combine with confectionery sugar, vanilla and nuts.
