1 cup sugar
1/2 cup canola oil/margarine
2 eggs
3 mashed bananas (the older mushy ones are best)
pinch of salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup white flour
3/4 cup whole-wheat flour
1/2 c walnuts (optional)
1/2 cup chocolate chips (optional)

Directions:
Directions:
Preheat oven to 350 degrees. Cream sugar, oil and eggs. Add banana. Mix dry ingredients in separate bowl and add to wet. Mix well and then put in 2 loaf pans (fill 1/2 full) or muffin tins. Bake for 30-45 min. or until toothpick comes out clean.

This goes as fast as I can make it! I call it banana CAKE this instantly makes the kids love it! It also freezes well and is a perfect snack or as a last minute dessert! Let it thaw on the counter because if you microwave it, all the chocolate chips will melt into the loaf :(
