1 3/4 c. sugar
1 c. vegetable oil
3 eggs
1 t. vanilla
2 c. unbleached flour
1 t. baking soda
1 t. cinnamon
1 t. nutmeg
1/2 t. salt
3 cups chopped apples (with skins on)
1 c. walnuts

Directions:
Directions:
Mix sugar, oil, eggs and vanilla. Mix and add flour, baking soda, cinnamon, nutmeg and salt. Mix and add apples and walnuts. Bake at 350º for 45 minutes in a 9x13 pan or 1 1/4 hr in a greased and floured bundt pan.

You can reduce the sugar to 1/2 c, but don't go lower than that). You can reduce the oil as well to 1/3 c. olive oil and 2/3 c. unsweetened applesauce. I always use a bundt pan and so don't know how it turns out in a 9x13 pan. This is my friend, Georgie LeDuc's, recipe.
