1/4 cup olive oil
1 med onion, chopped
a few carrots, chopped
celery, chopped
salt and pepper
any other vegetable you desire
8 cups vegetable stock
1/2 cup quinoa
parsley, about 1/4 of a bunch, chopped

Directions:
Directions:
Saute the onion, carrot and celery. Add any hard vegetable you want....winter squash, parsnip, turnip and salt and pepper. Cook, stirring, for a few minutes, then add the stock (I use Better than Bouillon, vegetable base). Bring to a boil. Reduce heat a bit and cook until the vegetables are fairly soft. Add any soft vegetables, like green beans, zucchini or summer squash, parsley and quinoa. Cook until all the vegetables are tender and quinoa is done, about 15 minutes.
