8 flour tortillas
1 1/2 lbs. ground meat
1 lg. red onion, chopped
1 pkg. taco seasoning
1 med. can tomato sauce
1 lb. cheddar cheese, grated
1 lb. Monterey jack cheese, grated
1 sm can sliced olives
1 lg. can La Victoria enchilada sauce

Directions:
Saute meat and onion in skillet. Salt and pepper to taste. When meat is brown, add taco seasoning and stir well. Combine enchilada and tomato sauces in shallow pan (may need to add more enchilada sauce). Combine the grated cheeses by processing them alternately in food processor. Dip tortilla in sauce and cover well. Fill tortilla with 1/3 c meat mixture and large handful of cheese mixture. Roll tortilla and place in 9x13 pan. Repeat with the rest of the tortillas or as many as fit into the pan. Tightly wedge the filled tortillas in the pan. Pour 1-1 1/2 c. remaining sauce over the enchiladas. Sprinkle with grated cheeses and top with sliced olives. Bake at 350 degrees for 50-60 minutes. Serve with guacamole and sour cream, if desired.
