2 cups wild rice
1/2 teaspoon salt
4 cups boiling water

Directions:
Directions:
Preheat oven to 500º. Put rice in a 3-quart Le Creuset or similar type of heavy casserole dish. Add boiling water and salt. Place in hot oven. Turn off oven. Leave casserole in oven overnight. Next morning, remove from oven and fluff with a fork. Store covered in refrigerator or can be frozen for later use. Makes about five to six cups rice.
