1 pound boneless skinless chicken breast cut into thin strips
1/4 cup butter
1-1/2 cups uncooked long grain rice
5 medium carrots, sliced
1/2 onion, chopped (can use more)
1/2 cup sliced fresh mushrooms (optional)
1/4 cup chopped red pepper
4 cups chicken broth
2 tbsp minced fresh parsley

Directions:
Directions:
In a large skillet brown chicken in butter. Remove and keep warm. Add rice, carrots, onion, mushrooms and red pepper to the skillet. Cook and stir until rice is browned and onion is tender. Stir in broth. Place chicken over rice mixture. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender. Stir in parsley. Let stand 5 minutes before serving.
