1 package Pillsbury pie crusts -- (found in Dairy
Case)
2 T. flour
4-5 medium red tomatoes -- sliced, skin on
salt and pepper -- to taste
2 T. fresh basil ( note at bottom)
2/3 c. mayonnaise
6 oz. white cheddar cheese -- shredded




Directions:
Directions:
1. Arrange 1 pie crust in bottom of 8-9" pie plate.
Sprinkle 2 T. flour on top.
2. Layer 1/2 of the sliced tomatoes and 1/2 of the
cheese. Sprinkle salt and pepper on top.
3. Repeat layering rest of tomatoes, cheese and
seasonings.
4. Spread mayonnaise on top.
5. Cover and vent top crust.
6. Bake at 400 for 20-25 minutes.
7. Let sit a few minutes before serving.
