1/4 cup olive oil
4 garlic cloves
1 tbsp. paprika
1 tsp. cumin
1/2 tsp crushed red pepper
1/2 cup plain Greek yogurt
4 skinless, boneless chicken breasts
1 (15 oz) can garbanzo beans
1 (12 oz) basket cherry tomatoes
1 cup fresh cilantro divided

Preheat oven to 400º. Mis first 5 ingredients in a medium bowl. Pour 1 tsp. of spiced oil mixture in the yogurt and whisk together. Set aside. Place chicken in a casserole dish. Rub 2 Tbsp. of remaining spice oil over chicken. Add beans, tomatoes and 1/2 cup cilantro to remaining spiced mixture. Toss to coat. Pour bean mixture over chicken. Sprinkle everything with salt and pepper to taste. Roast until chicken is cooked through about 20 minutes. Sprinkle with 1/2 cup of cilantro. Transfer chicken to plates and spoon bean mixture over chicken. Serve with yogurt sauce. Use leftovers for pita sandwiches. Top with yogurt sauce.
