3-4 chicken breast halves
2 tbsp. olive oil
1 large onion
2 cups zucchini
1 bell pepper
1-2 garlic cloves
1tsp. dried basil
salt and pepper to taste
1 lemon
1/2 cup pitted kalamata olives
4 oz. feta cheese
1 tomato chopped
Fresh basil leaves
1 package of curry couscous


Directions:
Directions:
Saute onions, garlic, zucchini, bell pepper in olive oil. Season chicken breasts with basil, salt and pepper and juice of 1/2 lemon. Bake at 350º for 20 minutes. Meanwhile add juice of other 1/2 of lemon, tomato and olives. Stir and simmer. Top chicken with the vegetables. Bake 5 minutes. Turn off oven and sprinkle with feta cheese and return to oven. Prepare couscous according to package directions. Serve.
