Ingredients: 2 boneless chicken breasts, halves 1/4 tsp. plus 1/8 tsp. salt; divided 1/4 tsp. plus 1/8 tsp. finely ground black pepper, divided 1 tsp. cumin seeds 2 tbsp. olive oil 4 large garlic cloves, minced 1/4 cup orange juice 2 tsp. lemon juice 2 thin orange slices 2 thin lemon slices 2 tbsp. chopped fresh parsley

Directions:Sprinkle both side of chicken breast with 1/4 tsp salt and pepper. Press cumin seeds into both sides of chicken. Heat oil in a large skillet over medium high heat until hot. Add chicken and cook 7-9 minutes or until golden brown and no longer pink in the center, turning once. Place on a plate; cover loosely with foil. Add garlic to skillet; cook and stir 30-60 seconds or until fragrant. Add orange juice, lemon juice and orange and lemon slices and 1 tbsp. parsley. Bring to a simmer scraping up of browned bits from pan. Stir in remaining 1/8 tsp. salt and pepper. Serve chicken with sauce; spoon orange and lemon sliced over chicken if desired. Sprinkle with remaining parsley. |
