10 lg. red potatoes with skins, boiled and diced
1 c. mayonnaise
1 lg. red onion, chopped
1/4 c. apple cider vinegar
10 eggs, boiled and chopped
dill weed, salt and pepper to taste

Directions:
Directions:
Stir together all ingredients and refrigerate 4 hours or overnight. Add more mayonnaise and/or vinegar as desired. Serve on bed of lettuce, garnished with parsley and paprika.
