1 pkg. chicken rice-a-roni
1/4 c. mayonnaise
2 jars marinated artichoke hearts
1/2 t. curry powder
3 green onions, chopped
1/2 t. dry mustard
1/2 bell pepper, chopped
1 c. peanuts

Directions:
Directions:
Prepare rice as directed using 1/4-1/3 less water. Cool and add the other ingredients and mix well. Reserve some artichoke oil to mix in if mixture seems dry. Refrigerate and serve. Recipe can be doubled. More curry can be used as desired.
