Boneless skinless chicken breast - one per person
Eggs - 1 per every two people
Bread crumbs w/sage (1/2 cup per person)
Onion - one medium large cut fine
Celery - several stalks cut fine

Directions:

Stuffing:
Cut bread into small pieces
Finely chopped onion
Celery cut into very small pieces
Pound the chicken breast flat
Stuff each piece with a handful of stuffing using a toothpick to hold it together.
Dip in beaten egg
Dip in bread crumbs, sage, and onions
Bake uncovered in pan for 1 hour at 350º
Uncover and bake for 1/2 hour at 160º

This recipe is simple and quick to make. Serve with potatoes or rice, and a healthy dollop of steamed vegetables. Seasoning is such a personal thing. Thyme, sage, etc., is one thing. Salt is another. Far too many people are now regulating their salt intake so I choose to let people add their own salt at the table.
