1/4 c. diced carrots
1/2 c. diced onions
1/4 c. diced celery
2 c. heavy cream
4 c. squash (butternut, etc), blanched
1 can chicken stock
white pepper, salt and tabasco to taste

Directions:
Directions:
In medium stock pot saute diced vegetables in olive oil. Make roux by mixing flour in sauteed vegetables. Add cream and cook slightly. Add squash and whir with hand-held blender or food processor; mix well. Use chicken stock to produce desired consistency; heat through. Season with white pepper, salt and tabasco to taste.
