Salsa: 1/4 c chopped green onions
1 T chopped fresh cilantro
1 can chopped green chiles
1 T lemon juice
1 (11oz.) can mandarin oranges, drained
1 (8oz) can pineapple tidbits, drained
Tacos: cooking spray
1 yellow bell pepper strips
1 c vertically sliced red onion
1 clove garlic, minced
1 1/2 # medium shrimp, peeled, & deveined
1 c shopped tomato
1/2 tsp ground cumin
1/2 tsp chili powder
2 T chopped fresh cilantro
8 (6 in) flour tortillas
1 1/4 c shredded Monterey Jack cheese

To prepare salsa, combine first 6 ingredients in bowl. Cover & chill
To prepare tacos, place large nonstick skillet coated w/ cooking spray over med/high heat until hot. Add bell pepper, onion & garlic- Saute 2 minutes. Add shrimp, tomato, cumin & chili powder - saute 3 minutes or until shrimp done. Stir in cilantro. spoon 1/2 c shrimp mixture over 1/2 of each tortilla & top with about 3 T cheese and 2 T salsa..
