1 1/4 C flour
1 tsp baking powder
1 tsp soda
1 tsp salt
1/2 C sugar
1/2 C brown sugar
1/2 C butter or soft shortening
1 egg
1/2 tsp vanilla or almond extract
1 C oats
1 C coconut

Directions:
Directions:
Sift together flour, baking powder, soda, and salt into a bowl. Add sugars, butter egg and flavoring. Beat until smooth, about 2 min.
Fold in rolled oats and coconut.
Shape dough into small balls, place on greased baking sheet.
Bake 350º 12 to 15 minutes.

Makes 3 dozen cookies.

This was a favorite of my mother-in-law's. She would make many batches to fill the ice cream buckets so we could take some home after visiting them.
