1 pkg vermicelli, broken (coiled)
3 tbsp oil
1 clove garlic, minced
1/2 onion, chopped
1 tbsp green pepper, diced
1 tomato, diced or 3 oz tomato sauce
2 c vegetable broth (or chicken)
salt and pepper
Parmesan cheese

Directions:
Directions:
Lightly saute onion, pepper and garlic in oil. Add vermicelli and saute until lightly browned.
Add tomato. Add broth and salt and pepper. Cover and cook until liquid is almost absorbed.
Garnish with Parmesan cheese and serve.
