10 C. water
4 1/2 C. sugar
1 C. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
2 or 3 drops yellow food coloring
5 1/2 lbs. apples, peeled and sliced
3 T. lemon juice
7 qt. jars prepared for canning

Directions:
Directions:
In a large saucepan, blend sugar, cornstarch, cinnamon, nutmeg and salt. Stir in 10 cups water. Cook and stir until it comes to a boil and thickens. Add lemon juice and food coloring. Remove from heat. Fill 7 quart jars with apples. Add hot syrup to fill to neck. Process in hot water for 20 minutes.
