1 cup butter
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla
2 cups grated zucchini
2 3/4 cups flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup walnuts
1 cup semisweet chocolate chips
1/2 cup raisins
1 cup sweetened coconut

Directions:
Directions:
Preheat oven to 350º. Cream butter and sugar together, then add eggs and vanilla, mixing until smooth. Stir in zucchini, nuts, chips, raisins, and coconut. Separately mix the dry ingredients, then mix it all together gently. Drop cookies onto a greased cookie sheet by the tablespoonful and cook for 15-20 minutes.

I lost track of where the recipe came from, but they are sweet and fantastic with lots of yummy textures in each cookie. This makes a large batch and they freeze wonderfully. These are favorites at the playground for a pick-me-up, and we always make sure to bring a big bag as it's a great ice breaker to offer someone an unusual and delicious cookie!
