Mash avocado, about 1/2 avocado per sandwich, and add lemon juice and salt to taste. If you're feeling feisty you can add garlic powder too.Spread mayo on slices of bread (or mustard for a low-cal tangy option), and place guacamole on just like you would egg-salad. It is now delicious as-is. For a mock BLT, do Avocado, Lettuce and Tomato with mayo on toasted bread. For a mock Reuben, add thousand island, Swiss and sauerkraut on rye bread. Cheese and sprouts are also a yummy option.

This is my little guy's favorite sandwich. I used to make avocado sandwiches but got irritated at the avocado slices smooshing out of the sandwich with each bite. Using a simple guacamole solves that problem and adds a delicious garlic-lemon flavor to any sandwich you make. And believe it or not, the ALT and Avocado Reuben are fantastic in their own right, really capturing some of the unique flavors of the more traditional sandwiches.
