1 lb. (3 1/2 c.) sifted powdered sugar
1/2 tsp. cream of tartar
3 egg whites, unbeaten
1/2 tsp vanilla

Directions:
After combining all ingredients in a mixer, beat at low speed until sugar is dissolved. Turn to high speed and beat until mixture is light and fluffy (about 10 minutes).
NOTE: Meringue powder may be used instead of fresh egg whites. Use 3 Tbsp. powder and 1/4 c. water in place of egg whites in above recipe.
