1/4 cup butter or oleo, melted
2 T vegetable oil
1/2 t paprika
1/4 t salt
1.8 t ground red pepper
2 1/2 lbs. potatoes, unpared, cut into 1 1/4 chunks

Directions:
Directions:
Preheat the oven to 350º. In a small bowl, combine butter, oil, paprika, salt and pepper.
Line a baking pan or baking sheet with aluminum foil. Arrange the potatoes in a single layer in baking pan. Brush with some of the butter mixture. Bake 1 hour or until the potatoes are fork-tender, turning and brushing occasionally with the remaining butter mixture.
