Crust:
1 c. flour
1/2 c. butter
2 T. sugar
pinch salt

Filling:
1 1/4 c. sugar
2 T. flour
3 beaten egg yolks
1/3 c. cream or sour cream
grated zest of 1 orange
2 1/4 c. rhubarb

Topping:
3 egg whites
6 T. sugar

Directions:
Directions:
Mix crust ingredients and put in an 8" x 8" pan. Bake at 325 for 30 minutes.
Mix all filling ingredients and put on the hot crust. Return to the oven for 30 minutes or more until set. While baking, whip together topping. Beat 3 egg whites and add 6 T. sugar, put on top of set filling and bake another 6-12 minutes until peaks brown.
