6 Eggs
1 diced Onion
1 diced Red Pepper
1/2 pound fried bacon
Couple of handfuls of crushed taco chips
Shredded Cheese
Salsa

Directions:
Directions:
Fry 1/2 pound of bacon pieces until crisp.
Drain off most of the grease, but retain enough to brown the diced onion and pepper. Stir in the crushed taco chips into the whisked eggs and add to the frying pan. Cook until the eggs are set. Turn off heat, add shredded cheese and cover the pan. When the cheese has melted the eggs can be served with salsa and sour cream.

This is really a variation of "army eggs" but with the added taco chips and salsa it moves into the Tex-Mex realm. First "invented" outside of Taos, New Mexico while camping in the Sangre De Christos Mountains.
