1 ¼ c. ricotta cheese
1 ¼ c. water
½ t. salt
¼ grated Parmesan
1 ¼ c. shredded Mozzarella
1 lb. lean ground beef
1 med. Zucchini, diced (about 1 cup)
1 jar pasta sauce
6 oven-ready lasagna noodles ( Barilla no-boil noodles)

Directions:

Mix together ricotta, water, salt, Parmesan & ½ cup of Mozzarella. Set aside.
Brown lightly the beef in a large skillet over medium heat. Drain any fat if needed.
Dice zucchini and add to the beef. Stir in 2 cups of the pasta sauce. Reduce the heat to med-low. Top the mixture with 2 lasagna noodles set in the center. Break 2 more noodles in fill in the edges. Spread the cheese mixture over the noodles. Layer on the remaining noodles and pour the rest of the pasta sauce, and spread it evenly. Then sprinkle on the remaining cup of mozzarella. Cover the skillet and simmer on med-low until the noodles are tender, about 20 min (try not to lift the lid during this time). Let cool for 5 min.
